Meet Elizabeth from Simple Country Farm

Exploring the beauty on our lavender farm, plant based food from scratch, and simple country living.

Hello, I'm Elizabeth!

What crazy times we find ourselves living in! There is so much uncertainty, but here in my corner of the world you can expect to find peaceful country living. I'll be sharing my plant based recipes from scratch, my homeschool tips and tricks, our lavender farm, farmhouse renovations, and our simple country lifestyle. Don't miss out on the adventure! Welcome to our simple country farm.

About me

My husband, Seth and I, had started dreaming of simple country living for our four children; one girl and three boys, however, California property was out of our price range. My parents had been looking for country property for some time, and when they found 160 acres in the golden foothills of central California and invited us to join them on the adventure, we jumped at the chance. The property boasted one large farmhouse, and an old run down shack in need of fixing up. Three years later and we are finally in our dream home with many projects still to finish!

I'm the oldest of five children and a country girl all the way! When I was six years old, my parents purchased 60 acres in Idaho right on the Canadian boarder. Here is where my siblings and I roamed freely.

I grew up eating a plant based diet, and am still a whole food plant based foodie.

I love to sew, but haven't had much time for it due to all the farm things. I'll be getting back at it as soon as I can!

My husband is in the Air Force reserves and was deployed in 2019 for 7 months. His civilian job is in his family owned accounting firm. Due to Covid, he has moved his office home permanently! This has truly been an amazing transition for our family! Thank you Covid!

A few facts about me:

My husband and I lived in Asia for 4 years where two of our children were born. Thailand for 3 years, and Korea for 1 year. I can speak some Thai. We also lived in Lebanon for 3 months in 2013. My husband worked with Syrian refuges.

We Moved back to the states in 2009 when we lost our second son. He was not quite two years old when he drowned in a swimming pool. Heart break, and pain have been a real part of our journey. Time heals all, but never takes away the hole in our hearts. We are so grateful for the 4 beautiful children that have filled our hearts with so much joy.

My husband and I just celebrated our 20th wedding anniversary! I was 18 when we were married! Best decision I ever made!

We only planned to have two children, but had a surprise pregnancy that turned into a double surprise, twin boys! Didn't see that one coming! I love our surprise big family!

I was also homeschooled!

Our third child was born at home. Great experience!

I've traveled to 13 countries.

I've been homeschooling my children for 9 years!
